I made this recently for my crew and not only did all four kids eat it without complaints (a small miracle!), but it was also one of the easiest weeknight meals I’ve put together. Back-to-school evenings are hectic, but these pork tenderloin medallions deliver a delicious dinner without the fuss.

  4. Finish in the oven: Transfer the skillet to a preheated 400°F oven and bake for about 10–12 minutes, or until the pork reaches an internal temperature of 145°F.

  5. Rest & serve: Let the pork rest for 5 minutes before serving.
