Canned tuna is given fresh flavor with fresh apples, celery, and Greek yogurt dressing! Apple tuna salad is delicious on whole wheat bread or fresh lettuce greens.
Before we get to the recipe for apple tuna salad, I have to dish on WHY I’m packing and eating tuna for lunch! Last Wednesday I had the opportunity to host a back to school Twitter party with my friends at Produce for Kids [PFK]. I seriously cannot get enough of PFK’s recipes and resources— or the great programs they run year round. The goal of the organization is simple: get families eating healthier foods. I’m sharing this apple tuna salad in hopes that it will inspire you to pack a healthy lunch AND take the Pledge with me. I might not have kids in school just yet, but we pack a lunch for Dad and he needs healthy food to fuel his workday too! I’ll admit Joey was skeptical of the tuna, but once he saw apples chunk in the salad he took at taste. And even went back for a second bite! That’s one thing I’ve learned when introducing new foods to kids: serve the new food with a familiar or favorite food.
So whether you are packing lunch for your child, husband, or yourself, I think we can all agree on the importance of making healthy food accessible for children. Ready to take the pledge? - 2- 6-ounce cans of tuna
- 1 small apple, cored and chopped
- 1 celery stalk, chopped
- 1 teaspoon lemon pepper seasoning
- ¼ cup plain Greek yogurt
- Mix all ingredients in a medium sized bowl. Serve immediately or store in your refrigerator [covered] for up to three days.
