Spring has SPRUNG friends, and that means the last few weeks have been packed with school, practices, and appointments for the kids, and work, chauffeuring, and doing a LOT on the fly [or go?!] for Mom. I realize this is just a stage or moment in time in our life, but guys, I dread making dinner after practice. Heck, I’ve been kinda dreading making dinner the past few years!!!! Kidding. But some days I just don’t want to do it…
Sure, we all need more time, an extra set of hands, maybe a body double?! Highly unlikely that any or all of the above will happen. SO, what then?
Give me 20 minutes, and I’ll give you 2 meal ideas! No, really. Both of these meal ideas take about 20 minutes or less to make [maybe a little more than 20 if you want the chili to simmer longer]. I’m all about the no-recipe, recipe meal ideas AND some weekly produce prep to save both time and money. Combine those two concepts and you have HOW I created these two simple meal ideas: skillet chili with extra veggies + steak salads with extra veggies. Guess what guys? The extra veggies are both the salad and the chili. Double kitchen-duty! Enough of my chit-chatting, let’s get to the food.
20 Minute Meal Ideas
Farmer’s Market Skillet Chili
The cast of characters: 1 lb. Ground Beef, 1 teaspoon chili powder, ½ teaspoon oregano, ½ teaspoon cumin, 3-4 cups marinara sauce, ½ cup veggies like green beans, kale, green onion, peas, etc. Serve with fresh tomatoes, shredded cheese, hot sauce, and sour cream. Cooked like a skillet chili would be cooked- all in the same skillet/pan!
Take a bagged salad to the next level by topping it with sliced Sirloin Steak, and adding additional toppings. Here are some of my favorite ways to jazz-up that bagged salad mix!
