With back to school season in full swing, I have to brag for a moment that I will not be making ONE school lunch this year. OK, I shouldn’t brag, because many days I know I’ll be wishing my kids were going to school through lunch [only 3 and 4-year-old preschool here], but I hear from many parents that the task of packing school lunch can be tasking. So, before I get to talking about these sandwich kabobs [perfect for school lunch], let me take a minute to share some of my favorite back to school lunch posts with you:

Ok, now on to the sandwich kabobs! Again, while I’m not packing school lunches this year, I know many of you are. And if you have kids like mine, one will eat a sandwich, and the other won’t. Then YOU are stuck packing multiple lunch ideas. But here’s the trick: my non-sandwich eater loves dipping ANYTHING in ranch dipping sauce. And yes, that means even the components of a sandwich. While 2 out of 3 are eating sandwiches, my guy Anthony will be eating a sandwich kabob with ranch. Everyone is sort of getting the same meal then, right?!

Whether you are packing a lunch or making a quick lunch at home once preschool ends, give these sandwich kabobs a try. Better yet, have the kids help you make them! The sandwich combos are endless, and you can even make the ranch a little healthier by using a Greek yogurt ranch dip like the kind I used from Litehouse Foods.

NO real recipe to follow here, just simply “kabob” your favorite sandwich together! And if you can, include a little crunch from fresh veggies, creaminess from cheese, and power from protein! You can see our favorites pictured throughout this post.

Litehouse foods, along with other partners, are sponsoring a campaign near and dear to my heart, Power Your Lunchbox [PYLB], on behalf of their partnership with Produce for Kids [PFK]. As you know, I’m the official registered dietitian nutritionist for PFK, so I take pride in sharing and supporting their great programs. By taking the PYLB promise, PFK will donate $1 to Feeding America, an organization that helps give meals to families in need through local food banks.

If you’re in need of some healthy school lunch inspiration, then I’d encourage you to take the Power Your Lunchbox Pledge to eat a healthier lunch this school year. Not only will your pledge help a family in need, but you’ll also receive healthy lunchbox ideas, tips, coupons and more! For every pledge taken, $1 will be donated to Feeding America® programs that benefit children and families across the U.S.

Along with lunch-packing ideas for parents, teachers can now get in on the action too. PowerYourLunchbox.com has a complete teacher resource page [#PowerYourLunchBox Classroom] where you can enter to win fun prizes and grab FREE classroom printables like lesson plans, bulletin board printables, classroom activities, and more!

Here are additional ways as to how you can get involved:

  • Take the pledge at poweryourlunchbox.com and share with your friends.
  • Show off your healthy lunchboxes. Upload your healthy lunchboxes to Instagram or Twitter using the hashtag #PowerYourLunchbox.
  • Party with Produce for Kids on Twitter. Join Produce for Kids and healthy lunchbox brands at the #PowerYourLunchbox Twitter party at 4 p.m. ET on Thursday, August 16.

Who is ready to have a healthy AND happy school year?!
