While it might always seem like I’m making new and creative meals for my family, truth be told our grocery cart looks VERY similar each and every week. In fact, the cast of characters in this BBQ chicken wrap are ALWAYS on the list. Flatout Flatbread? Check. Chicken breasts? Check. Packaged coleslaw? Wait, what?! “Where do I find that at the grocery store?” asked the hubby. I ended up throwing Ted for a loop with this one…

Ok so 95% of our weekly meal plan is the same or involves the same ingredients. But every now and then I change it up based on seasonal produce or the desire to add new, fresh ingredients to my family’s meal plan. And that’s exactly what I did with these BBQ chicken wraps + crunch coleslaw topping. Coleslaw and my kids [and husband] is hit or miss, but when I paired it with their go-to sandwich wrap and shredded chicken is my go-to sandwich filler, well then we had a CHANCE at everyone taking a bite or two. And Mom and Dad enjoying a wrap or two for lunch during the week.

When I make a mix n’ match sandwich [using foods on our regular grocery shopping list], I know one thing: if there’s Flatout Flatbread involved, the boys will always, and I mean always, eat the bread! Which is A-OK with Mom, because all Flatout flatbreads are filled with whole grains, fiber, and protein. For this recipe I used Flatout Light Original wraps, just 90 calories each and packed full of fiber. The chicken I made ahead of time, using my favorite slow cooker shredded method. And the coleslaw was a mix of chopped cabbage, carrot, and red bell pepper. If you’ve never had crunchy coleslaw on a sandwich I’d urge you to give it a try! It adds a whole other fresh element beyond just a few slices of lettuce and tomato.

So here’s to enjoying the old with new in 2017. And keeping meals delicious, fresh, and toddler-friendly. Toddler-friendly being the most important in THIS house!

BBQ Chicken Wrap with Crunchy Coleslaw Topping

Serves: 4 wraps
Ingredients
  • 2 cups shredded chicken
  • ½ cup BBQ sauce
  • 4 Flatout Light Original
  • 1 cup packaged coleslaw [without dressing]
  • 2 tablespoons ranch dressing
  • ¼ cup plain Greek yogurt
Instructions
  1. Combine chicken and BBQ sauce in bowl. Set aside.
  2. Combine coleslaw, ranch dressing, and Greek yogurt in a separate bowl. Stir to combine.
  3. Layer each individual Flatout Light Original with ½ cup chicken mixture and ¼ cup coleslaw across the middle of the flatbread.
  4. Assemble beginning at one rounded end of the flatbread. Roll up and cut in half for serving.
