This apricot grilled chicken has just the right amount of sweetness and tang thanks to one simple marinade made with pantry staple ingredients!

I’ve never considered myself a creative person anywhere outside of my kitchen. In fact, I remember getting a B in Design class in high school because I couldn’t, “color within the lines.” Seriously. But once I’m in the kitchen or perusing the grocery store aisles, I feel like Picasso! I guess that’s my prelude as to why and how I came up with this apricot grilled chicken. I’m somewhat of a condiment junkie and admittedly have fun buying new condiments here and there when I do my weekly grocery shopping at Kroger. So this week, I opened my fridge, saw a few ingredients that would make a tasty marinade, and let my creative juices flow! And you know what, sometimes the unplanned, random meals or ingredients make the best ones in the end. Take that Design class!! [Excuse my outburst— thankfully I can still blame the pregnancy hormones for a few more weeks].

I’ve definitely added apricot grilled chicken to my summertime grilling rotation. In fact, I feel like we should all cook or grill year-round because it’s one of the healthiest ways to prepare a meal! A simple staple protein like grilled chicken goes a long with sides of sautéed greens or a fresh salad, add some watermelon or cantaloupe and I know I’m pleasing my family and my baby belly.

If you have a different flavor of fruit preserves besides apricot, I’d suggest trying it! Sweetness goes really well with tang or spice in the stone ground mustard… so bring out that blank canvas [aka chicken breast—Simple Truth Natural Chicken Breasts from Kroger being my go-to] and have fun with your marinades! Ok clearly I’m a little too excited about kitchen crafting and am just hoping you are too. If not, you probably think I’m crazy… but hopefully you’ll try the recipe and not hold it against me!

Recipe type: Main Dish
Serves: 4-6 servings
Ingredients
  • ¼ cup apricot preserves
  • 2 tablespoons stone ground mustard
  • ½ cup chicken broth
  • 2 tablespoons olive oil
  • 1 ½ - 2 pounds Simple Truth Boneless, Skinless Chicken Breasts
  • Cooking spray
Instructions
  1. Combine first 5 ingredients in a small bowl, stirring well. Cover and refrigerate for at least 30 minutes [I let mine marinate for 4 hours]. Remove from refrigerator, and let stand at room temperature while you prepare your grill.
  2. Heat grill to medium-high heat. Spray grill racks with cooking spray. Place chicken over direct heat and grill 6-8 minutes on one side.
  3. Turn chicken over; baste with apricot mixture and grill for an additional 6-8 minutes, or until juices run clear. Let the grilled chicken rest for 5 minutes before serving.
Notes
Cooking spray is recommended to help prevent the apricot preserves from sticking to the grill. Consider cooking chicken breasts on medium heat to prevent charring or burning.
