40 Cloves of Garlic Chicken is one of the easiest weeknight chicken dinners you can make! The natural juices from the chicken and garlicky broth make a delicious dipper for crusty bread or served over brown rice!

THIS meal. One that I grew up eating and am fairly certain is keeping me safe from vampires for the rest of my life, is one of the most delicious chicken recipes I’ve ever eaten [and now made]. I wish I could give myself credit for this 40 cloves of garlic chicken, but the gold star goes to my Mom, aka Nana. Nana knows her way around the kitchen [like mother like daughter] and suggested I make this recipe a few weeks ago when I was complaining about having to cook dinner. Please tell me you’ve been there and done that too… While my rendition is a little different [she makes a sauce at the end with the garlic broth— we ate as-is], I highly recommend you add this to your weeknight meal rotation. 40 cloves of garlic and all!

When I was in a rush to put together dinner, I was able to turn on Paw Patrol for the boys, get dinner in the oven before one episode was finished, and even heard the words, “this is my new favorite,” from Ted after we ate together as a family. Kids out of the kitchen while I cook? Check. Husband happy with dinner? Check. And Mom only had one pot to clean. ALLELUIA! If I haven’t convinced you yet to make this meal, then I don’t know what else to say. Other than did you see the ingredient list?

While the recipe title 40 cloves of garlic chicken might seem a little overwhelming to some [HELLO GARLIC], it surprisingly wasn’t with my toddlers. The garlic cloves get super soft and are delicious on crusty bread or mixed in with rice. Garlic offers their little bodies lots of immune boosting properties—and I’m all for them chew on a clove or two after we’ve spent the afternoon at the park [and I’ve caught Joey chewing on rocks]. You can easily add more or less to this recipe too… so if you have some white wine vs. chicken broth, use that! No thyme? Add in a bay leaf. Not a fan of chicken breasts? Use thighs! All I’d suggest you keep the same is chicken [as the protein], garlic, and lemon combination!

Serves: 4-6 servings
Ingredients
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1.5 pounds boneless skinless chicken breast
  • Juice and zest of one lemon
  • ½ teaspoon dried thyme
  • ¼ teaspoon pepper
  • 20 cloves of garlic, unpeeled
  • 2 heads of garlic, top cut off
  • ½ cup chicken broth
Instructions
  1. Preheat oven to 350. In a large Dutch oven, melt the butter in oil. Add chicken, and cook, turning, until browned on both sides, about 5-10 minutes.
  2. Add remaining ingredients and stir to coat.
  3. Cover and bake for about one hour, until chicken is cooked through and garlic is soft.
  4. Serve with crusty bread, whole grain pasta, or brown rice.

Wasn’t the kids meal cute? I will add the boys ate a few bites of chicken, all of the berries, all of the asparagus [Anthony, only], and both asked for more garlic sauce on their rice. Needless to stay people stayed clear of us at the park for a few days!
