Chilled Strawberry Basil Soup

Chilled strawberry basil soup is a light and refreshing soup for any warm weather occasion!

This June I have more than one friend expecting a baby. As the designated foodie of my group, it’s common practice that I bring a meal to whoever is having a baby as part of the “welcome home baby!” celebration. Since most women are looking for light and healthy eats post-delivery, I think this strawberry basil soup is the perfect meal for any new mommy. To enjoy, all you need is a bowl and spoon. No heating or cooking required! That’s music to any mom’s ears… and any dad’s ears meant for cleanup duty.

What makes this soup extra special is that it’s refreshing. Almost energizing. And any new parent would agree take all the energy you can get— preferably in food form [since we all know no one is getting any sleep for a few weeks] when it’s offered. With the protein combination of yogurt and milk, you’ll stay fuller longer, or at least for a few hours, And when you are caring for a newborn or infant, you really don’t know when your next meal is going to be so you need all the nutrients you can get WHEN you actually do get to eat.

Now there’s plenty of celebrating that goes on this time of year. For me, I just happen to be in the time and place of my life when many of my friends are having babies. But you might be attending a graduation party, a birthday party, or a backyard BBQ and need a dish to pass. Consider bringing this soup. It’s sure to be a crowd pleaser [and check out the ingredient list—- how EASY is this?!].

Strawberry Basil Soup

Recipe type: Soup
Serves: 4- 8oz. servings
Ingredients
  • 2 cups of strawberries
  • 1 cup of strawberry flavored yogurt
  • ½ cup of milk
  • 2 tablespoons of lemon juice
  • ¼ cup fresh basil leaves, torn
  • ¼ teaspoon of vanilla extract
Instructions
  1. In a food processor, combine all of the ingredients. Cover and process until blended.
  2. Serve immediately or store in your refrigerator until ready to serve.

I’ll have you know that when I delivered both of my boys it was cold outside [October and December]. And I wouldn’t have dreamt of having a cold soup for a meal. But I was pregnant in the heat of summer and I would’ve slurped this strawberry basil soup down like there’s no tomorrow! So think twice before you bring a new mommy baby toys or clothes. Chances are mom would appreciate a nutrient-packed, no-fuss meal that doesn’t take reheating or extra ingredients to be enjoyed.
