Filled with layers of flavor and simple ingredients, this slow cooker balsamic chicken is sure to make any weeknight meal taste both elegant and delicious!
Since Lily has become mobile, I have found less time for doing things like cooking, blogging, working out, showering, etc. You get the picture! Little sis is putting me to the test and wanting to be in and around me always [there’s no escaping her now]. So that means I’ve had to get creative and whip up recipes on the fly. Until she can start reading me recipe directions, I think we will continue throwing whatever it is we have on hand into the slow cooker and call it dinner! Or slow cooker balsamic chicken if we need an exact recipe title for this creation.
There’s nothing I love more than the flavor combination of balsamic vinegar, cherry tomatoes, and parmesan cheese. Throw a little chicken in the mix and you have yourself the base for a salad, wrap, flatbread pizza, you name it!
Similar to the Greek Chicken Bowls I shared last weekend, I think this slow cooker balsamic chicken makes a great meal prep recipe. You guys know I’m all about meal prepping with simple shredded chicken. Just take it up a notch with balsamic vinegar and lots o’ Parm. I let Joey and Anthony sprinkle the Parmesan cheese over their plates and let’s just say the floor got a good handful of it too.
Whether you have a baby following your every move or need a weeknight meal your kids can eat in the car before baseball practice, give this one a try!
- 1.5 pounds boneless, skinless chicken breast
- 1 medium yellow onion, sliced
- 1 cup cherry tomatoes
- ¼ cup balsamic vinegar
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- salt and pepper to taste
- Add chicken, onions, and tomatoes to slow cooker. Combine remaining ingredients in small bowl. Whisk together and pour over chicken. Stir to combine.
- Cover and cook chicken mixture for 4 hours on high or 6 hours on low.
- Shred and serve immediately.
You can eat this slow cooker balsamic chicken as-is, or use as a filling for a wrap, or topping for fresh leafy greens! Any way you choose to eat it, I know it will soon be a family-favorite and mealtime saver for Mom and Dad!

I’ve got this in my slow cooker right now, and it smells so good! I know this is an older post, but I had to comment. I’m loving your site and your advice for us moms of picky little ones. Our 5 year old is way more picky than I could’ve imagined, but (I think) she’s getting better. Willing to try things sometimes now, at least! Our 2 year old was eating everything, but recently started picking up his sister’s food habits. I’ll be trying so many of your recipes…thank you!
