Lately when the kids head off for Ted’s for the night, I find myself baking. It’s been my pause after the go-go-go for the day[s] with them. While lemon is NOT a Serbinski-kid favorite, it sure is a Serbinski-Mom fav, hence this is the lemoniest easy lemon cheesecake muffin I could dream of!

Easy Lemon Cheesecake Muffins made with Lemon Cake Mix
Makes: 12 muffins
- 1 box lemon cake mix
- 1/4 cup flour
- 1 teaspoon baking powder
- 3 eggs
- 1/3 cup vegetable oil
- 2/3 cup 2% milk
- 1 teaspoon lemon extract
- 1/2 cup white chocolate chips
- Lemon glaze or powdered sugar (optional)
Preheat oven to 350°F. Line 12-cup muffin tin with paper liners.
In a large bowl, mix together the cake mix, baking powder, and flour until well combined. In a separate bowl, combine the eggs, oil, milk, and extract until smooth. Add wet ingredients to dry. Stir until combined, folding in the chocolate chips at the end.
Spoon the lemon cake batter, filling the cups about 3/4 full.
Bake for 18- minutes, until a toothpick inserted in the center comes out clean. Allow to cool completely.
