Peanut Butter Cup Pizza is the combination of two classic indulgences: peanut butter cups + pizza! Instead of a heavy crust, this sweet treat is made on Flatout Flatbread.
Between Halloween and Christmas there’s one word that can easily define my eating strategy: moderation. BUT, there’s one food that makes moderation IMPOSSIBLE for me 365 days out of the year, not just the holidays. Instead of depriving myself of this food, I find ways to incorporate and enjoy it the entire year. Because lets face it: the more you deprive yourself of a food or beverage you really crave, the more likely you are to binge and over eat it [or overeat other foods]. My eating philosophy and extreme sweet tooth was the reason behind this peanut butter cup pizza. Can you take a wild guess at what my vice is?! Peanut butter cups!!
When my friends at Flatout Flatbread approached me with a product they’re partnering with, Dollop Gourmet, I couldn’t resist a sample. I also couldn’t resist the Peanut Butter Cookie Dough Spread [think frosting]. Umm hello— this is like a peanut butter cup but in frosting form! And because I use Flatout Flatbread for everything from breakfast burritos to apple and cheese quesadillas to hummus and veggie flatbread, I decided it was a worth a try combining the two to make one simple, healthy-ish dessert. What makes peanut butter cup pizza healthy? Well I’m not going to fool you. There’s sugar, and calories, and fat in this goody. But there’s also the fact that the frosting is made will recognizable ingredients and the flatbread is full of fiber and a whole crew of vitamins and minerals. A nice compromise in a dessert, right? Just keeping it real folks… this registered dietitian eats desserts! I hope that doesn’t come as a shock to you…
I love that Flatout and Dollop have teamed up to provide people like me [aka the peanut butter cup junkies who still preach moderation] with sweet indulgences that give me that sweet— without the temptation to overindulge. So here’s a simple recipe that is a great excuse to use up that extra Halloween candy AND get your fill of whole grains too!
- 2 Flatout Flatbreads
- 4 tablespoons of Dollop Peanut Butter Cookie Dough Spread [divided]
- 6 Peanut Butter Cups, roughly chopped
- ½ cup peanut butter
- Preheat oven to 350. Place flatbreads on nonstick baking sheet. Bake for 7 minutes.
- Meanwhile, melt peanut butter in microwave for about 30 seconds. Stir. Microwave for an additional 15 seconds until melted.
- Once flatbreads are done baking, spread two tablespoons of frosting on each flatbread. Top with peanut butter cups and a drizzle of peanut butter. Serve immediately.

Yum! Peanut butter cups are one of my faves! I usually put peanut butter and chocolate chips on a tortilla for a treat. The flatbread sounds like it is a bit healthier than my flour tortilla.
