Beef, Beans, and Greens Soup

  • 3 cups cooked [leftover] beef roast
  • 2 teaspoons olive oil
  • 1 medium yellow onion, chopped
  • 2 stalks celery, chopped
  • 2 large carrots, peeled and chopped
  • 4 cloves garlic, minced
  • 1 15-ounce can of cannellini beans
  • 4 cups collard greens, chopped
  • 6 cups vegetable broth
  1. Heat oil in stockpot over medium heat until hot. Add onion, celery, carrots, and garlic; cook 5 to 7 minutes or until vegetables are tender, stirring occasionally.
  2. Stir in beans, beef, green, and broth; bring to a boil. Reduce heat; cover and simmer 20 minutes to develop flavors, stirring occasionally. Remove from heat. Serve.
