40 Cloves of Garlic Beef Roast is elegant enough for a holiday dinner, yet simple enough for a budget-friendly weeknight meal. All you need is a few ingredients and a little time.
Ingredients
  • 2 tablespoons olive oil
  • 3 pounds Sirloin Tip roast
  • 1 tablespoon kosher salt
  • 2 medium onions, peeled and chopped
  • 40 cloves garlic, peeled
  • 1 cup beef broth
Instructions
  1. Preheat oven to 325. Set large Dutch over on stove over high heat. Season beef with salt. Add oil to hot pan. Sear beef over 4 minutes per side. Remove from pan.
  2. Add onions to pan. Cook for an additional 5 minutes, stirring occasionally. Add garlic.
  3. Nestle beef on top of vegetables. Pour broth around perimeter.
  4. Put in oven. Roast for 3.5 to 4 hours, or until the internal temperature is 150.
  5. Remove from oven and rest for 10 minutes before slicing.
  6. Season with more salt to taste and serve immediately.
