Slow Cooker Italian Beef Stew

Serves: 6 servings
- 2 tablespoons olive oil
- 1 ½ pounds beef stew meat
- 5 stalks celery, sliced
- 2 cups baby carrots
- 1 medium onion, sliced
- 4 large portabella caps, sliced
- 2 cups baby potatoes
- 2- 14-ounce cans petite diced tomatoes
- 2 cups marinara sauce
- 2 cups beef broth
- 1 tablespoon beef base
- 1 bay leaf
- Add oil to large non-stick skillet, heat to medium-high heat. Add beef and brown on all sides.
- Add beef plus remaining ingredients to the slow cooker. Cover and cook on low for 8 hours.
- Serve with fresh parsley or a sprinkle or two of parmesan cheese.
