Slow Cooker Italian Beef Stew

Ingredients
  • 2 tablespoons olive oil
  • 1 ½ pounds beef stew meat
  • 5 stalks celery, sliced
  • 2 cups baby carrots
  • 1 medium onion, sliced
  • 4 large portabella caps, sliced
  • 2 cups baby potatoes
  • 2- 14-ounce cans petite diced tomatoes
  • 2 cups marinara sauce
  • 2 cups beef broth
  • 1 tablespoon beef base
  • 1 bay leaf
Instructions
  1. Add oil to large non-stick skillet, heat to medium-high heat. Add beef and brown on all sides.
  2. Add beef plus remaining ingredients to the slow cooker. Cover and cook on low for 8 hours.
  3. Serve with fresh parsley or a sprinkle or two of parmesan cheese.
