Slow Cooker Mediterranean Beef

  • 2 pounds stew beef, cut into 1-inch cubes
  • 2 cups marinara sauce
  • 1 medium onion, diced
  • 12 ounces marinated artichoke hearts, drained
  • 12 ounces roasted red peppers, drained and sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 16 ounces gnocchi
  • Grated parmesan cheese for serving
  1. Add beef, marinara sauce, onion, artichoke hearts, peppers, and seasonings to your slow cooker. Cover and cook on low for 6 hours.
  2. Cook gnocchi according to package directions. To plate, add gnocchi to bowl and top with beef mixture. Sprinkle parmesan cheese over top.
