Slow Cooker Mediterranean Beef

- 2 pounds stew beef, cut into 1-inch cubes
- 2 cups marinara sauce
- 1 medium onion, diced
- 12 ounces marinated artichoke hearts, drained
- 12 ounces roasted red peppers, drained and sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 16 ounces gnocchi
- Grated parmesan cheese for serving
- Add beef, marinara sauce, onion, artichoke hearts, peppers, and seasonings to your slow cooker. Cover and cook on low for 6 hours.
- Cook gnocchi according to package directions. To plate, add gnocchi to bowl and top with beef mixture. Sprinkle parmesan cheese over top.
