Mexican Beef and Potato Soup

Ingredients
  • 2 tablespoons olive oil
  • 1 pound Lean Ground Beef
  • 2 tablespoons taco seasoning
  • ½ red bell pepper, diced
  • ½ orange bell pepper, diced
  • 1 pound baby gold potatoes, cut into 1 inch cubes
  • 1-4.5 ounce can green chiles, chopped
  • 1 ½ cups salsa
  • 4 cups beef broth
  • 2 cups water
  • ¾ cup frozen corn
Instructions
  1. Heat oil in large stockpot over medium-high heat. Add ground beef and taco seasoning, using a spoon to break ground beef into crumbles, stirring occasionally for 5-7 minutes.
  2. Add bell peppers and cook for an additional 5 minutes.
  3. Add remaining ingredients and bring to a boil
  4. Reduce heat, cover, and simmer for about 30 minutes, or until the potatoes become tender.
  5. Serve with your favorite toppings such as sour cream, avocado, shredded cheddar cheese.
