Leftover Roasted Vegetable Chicken Soup

  • ½ cup green beans, trimmed
  • ½ cup zucchini, cubed
  • ½ cup yellow squash, cubed
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 1 can ProgressoTM Hearty Chicken & Rotini Soup
  1. Preheat oven to 400 degrees. Spread vegetables onto a roasting pan. Toss with olive oil and salt and pepper.
  2. Roast for 20-25 minutes.
  3. Meanwhile, heat soup over medium-low heat on stovetop. Stir in vegetables before serving.
