Slow Cooker Peanut Chicken

  • 1 ½ pounds boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 medium yellow onion, diced
  • 1 cup peanut sauce
  • 2 cups brown rice, cooked
  • 1 cup shredded cabbage
  • 1 small lime, sliced
  • ½ cup peanuts
  • fresh cilantro for serving
  1. Add chicken, onion, and peanut sauce to slow cooker insert. Cover and cook on low for 3-4 hours.
  2. Serve with ½ cup rice and ¼ cup of cabbage per serving. Top with a sprinkle of peanuts and cilantro, and a squeeze of fresh lime juice.
