Italian Chicken Soup

Ingredients
  • ½ yellow onion, diced
  • 2 lbs. boneless, skinless chicken breasts
  • 3 tablespoons pesto
  • 1 cup roasted red bell pepper, chopped
  • 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 1 cup bowtie pasta
  • Grated parmesan cheese for serving
Instructions
  1. Slow cooker instructions: Add all of the ingredients except pasta to slow cooker. Cover, and cook on low for 5 hours. Remove chicken, shred, and add back to broth. Add pasta, cover, and turn to high heat for 30 minutes. Serve with Parmesan cheese if desired.
  2. Stockpot instructions: Add all of the ingredients except pasta to stockpot. Cover, and cook on low for an hour. Remove chicken, shred, and add back to broth. Add pasta, cover, and turn to high heat for 30 minutes. Serve with Parmesan cheese if desired.
