Baked Parmesan Cauliflower Bites

  • 4 cups cauliflower florets
  • 2 large eggs, beaten
  • 1 cup Italian seasoned breadcrumbs
  • ½ cup parmesan cheese, grated
  • Olive oil- as needed
  • 1 cup marinara sauce for serving
  1. Preheat oven to 400. Add breadcrumbs and cheese to a large bowl and mix together.
  2. Dip cauliflower pieces in egg, then roll in bread crumbs. Place on a non-stick baking sheet or a baking sheet lined with parchment paper. Drizzle olive oil over the top of the cauliflower before baking to prevent breadcrumbs from drying out.
  3. Bake for about 20-25 minutes or until coating is golden brown and crunchy. Serve with marinara sauce.
