Sausage and Zucchini Skillet

  • 1 tablespoon olive oil
  • ½ medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound Italian sausage, sliced into ½-inch rounds
  • 1 zucchini, cut in half lengthwise then into ¼- inch pieces
  • 1-14.5 ounce can diced tomatoes
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried basil
  • salt and pepper to taste
  1. Heat large skillet over medium heat. Add olive oil and onion. Sautee until onion is translucent, about 5-7 minutes.
  2. Add garlic and sausage. Cook until sausage is browned, about 7 minutes.
  3. Stir in the zucchini and remaining ingredients, and cook for another 5 minutes [or until the zucchini is soft].
  4. Serve immediately or over a bed of steamed brown rice or pasta. Top with Parmesan cheese if desired.
