Turkey Pesto Meatballs

Serves: 4-6 servings
  • 1 ¼ pound lean ground turkey
  • ¼ cup pesto
  • ¼ cup panko breadcrumbs
  • ¼ cup shredded Parmesan cheese
  1. Preheat oven to 350. Place all ingredients in large mixing bowl. Using your hands, stir mixture until everything is well combined.
  2. Using about 1 tablespoon of the mixture per meatball, roll into balls and place on a nonstick baking sheet or baking sheet lined with foil.
  3. Bake for 20-25 minutes or until meatballs are cooked through.
Freezing Instructions: If you want to freeze the meatballs uncooked, I’d recommend forming the meatballs and placing on a baking sheet in your freezer for 30 minutes. Then transferring them to a resealable plastic bag and freezing for up to 4 months. You can also cook as-is and freeze for the same amount of time.
