Make-Ahead BBQ Chicken Bowls

Ingredients
  • 1.5 pounds boneless, skinless chicken breasts
  • ½ yellow onion, sliced thin
  • 1 cup BBQ sauce
  • 3 large russet potatoes, cut into 1-inch dice or bite sized pieces
  • 3 tablespoons olive oil
  • salt and pepper to taste
  • 1.5-2 cups frozen corn [preferably in microwaveable bag]
Instructions
  1. Preheat oven to 425. Add chicken, onion, and BBQ sauce to small Dutch oven. Cover and cook for 20 minutes, or until chicken easily shreds with two forks.
  2. Meanwhile, while chicken is cooking, toss potatoes, olive oil, and salt and pepper so potatoes are evenly coated. Place on baking sheet and roast for 30-35 minutes, stirring halfway through.
  3. When chicken and potatoes are finished cooking, microwave corn according to package directions. Serve everything in small serving bowls with extra BBQ sauce, if desired.
Notes
Step 1 and 2 can be done at the same time OR both ahead of time. Just reheat chicken and potatoes on the stovetop before eating. You can also cook chicken in your slow cooker for 5-6 hours on low with BBQ sauce and onions.
