White Bean Quesadilla

Ingredients
  • 1-100% whole wheat tortilla
  • ¼ cup cannellini beans, mashed with a fork
  • ¼ cup shredded cheddar cheese
Instructions
  1. Spread beans and cheese on one half of tortilla. Fold tortilla in half.
  2. Heat non-stick skillet over medium heat. Warm folded quesadilla until one side is golden brown, about 5-6 minutes. Flip and heat for 5 minutes on the other side.
  3. Cut into wedges and serve with salsa or marinara sauce.
