Chewy Pumpkin Chocolate Chip Bars

Ingredients
  • 2 cups old fashioned oats
  • ½ cup sunflower seeds
  • ½ cup apple chips
  • ½ cup pumpkin puree
  • 1 ripe banana, mashed
  • 3 tablespoons honey
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice
  • ½ cup chocolate chips
Instructions
  1. Preheat your oven to 350. Combine all of the ingredients in a medium sized bowl. Stir to combine.
  2. Line an 8x8 baking pan with parchment paper. Spread mixture evenly in pan. Bake for 25-30 minutes, or until the top is golden brown.
  3. Cool for 10 minutes. Slice into 8-10 bars.
