Slow Cooker Lasagna Soup

Ingredients
  • 1 pound lean ground beef
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 4 cloves of garlic, minced
  • ½ medium sized onion, diced
  • ½ green bell pepper, diced
  • 28 ounces crushed tomatoes
  • 6 cups chicken broth
  • 10 uncooked lasagna noodles
  • ¾ cup grated Parmesan cheese
  • Optional Toppings: fresh basil, ricotta cheese
Instructions
  1. Brown the ground beef in a skillet.
  2. Add beef, seasonings, garlic, onion, bell pepper, tomatoes and broth to slow cooker. Cover and cook on low for 5-6 hours.
  3. Break lasagna noodles into small pieces and add to slow cooker along with Parmesan cheese. Cover and cook for another 30-40 minutes.
  4. Serve with more cheese and fresh basil!
Notes
Make sure to stir the lasagna noodles into the soup to prevent them from sticking together. You may need to stir them a few times during the 40 minute cooking time.
