Chicken Piccata Pasta

Ingredients
  • 2 cups cooked chicken breast, shredded
  • 2 tablespoons butter
  • 2 cloves of garlic, crushed
  • ⅓ cup lemon juice
  • 1 cup chicken broth
  • ½ cup white wine
  • ¼ cup grated Parmesan cheese
  • 1-14oz. can artichoke hearts, chopped
  • ¼ cup capers
  • 6oz. angel hair pasta
Instructions
  1. Bring a large pot of water to a boil. Add pasta and cook until just tender, 4 to 6 minutes or according to package directions. Drain and rinse.
  2. Meanwhile, heat butter in a large skillet over medium-high heat. Add the garlic and sauté for 2-3 minutes.
  3. Add lemon juice, wine, and chicken broth and bring to a simmer. Simmer for 5 minutes. Add the shredded chicken, artichoke hearts, and capers and simmer for an additional 2 minutes, until the chicken is heated through. Stir in the parmesan cheese.
  4. Toss the pasta in the pan. Serve with a sprinkle of parmesan cheese and a spoonful or two of extra sauce.
