Thai Beef Salad

  • 1 pound of lean ground beef
  • 2 cups of spicy peanut sauce [I used this recipe]
  • 2 cups of leafy greens
  • 1 cup of broccoli slaw
  • 1 cup of red bell pepper, sliced
  • ½ cup of red onion, sliced
  1. Heat large nonstick skillet over medium heat until hot. Add Ground Beef; cook 8 to 10 minutes, breaking into ½-inch crumbles and stirring occasionally. Remove drippings.
  2. Stir in sauce; bring to a boil. Reduce heat; cover and simmer 10 minutes.
  3. Place the leafy greens in a large bowl. Add the additional toppings and beef. Toss to combine. Serve immediately.
