Preheat your oven to 350. Combine all of the ingredients in a mixing bowl. Lightly grease a mini-muffin tin pan.
Spoon quinoa mixture into each muffin tin cup, filling each cup to the top [about one heaping tablespoon each].
Bake for 16-18 minutes. Serve immediately with a dipping sauce, such as ketchup or marinara sauce.
Notes
Store in your refrigerator in an airtight container for up to one week. Store in your freezer for up to 3 months. Reheat in the microwave for 10-15 seconds.
