Cinnamon Apple Quinoa Parfait

  • 2 cups of quinoa, cooked
  • 2 tablespoons of honey
  • 1 teaspoon of cinnamon
  • 2 cups of vanilla nonfat yogurt
  • 2 medium sized apple, cubed
  1. Mix the quinoa, honey, and cinnamon in a bowl.
  2. Assemble the parfaits by layering a ¼ cup of yogurt, ¼ cup of quinoa, and a ¼ cup of apple in a bowl. Repeat layers.
  3. Sprinkle with cinnamon before serving [optional].
