Skillet Swedish Meatballs

Ingredients
  • For the Meatballs:
  • 1 pound of lean ground beef [93% lean or leaner]
  • 1 cup of fresh spinach, chopped
  • ¼ cup panko breadcrumbs
  • 1 egg
  • 3 cloves of garlic, minced
  • ¼ cup of parmesan cheese, grated
  • 2 tablespoons of Italian seasoning
  • For the Sauce:
  • 5 tbsp butter
  • ⅓ cup flour
  • 2 ½ - 3 cups beef broth
  • ¾ cup sour cream
  • Salt and pepper to taste
  • 1 tbsp finely minced parsley, divided
Instructions
  1. Heat your oven to 375. Combine all of the ingredients in a large mixing bowl.
  2. Using a small cookie scoop [pictured in post], shaped into 1-inch meatballs. Place on a broiler pan or baking sheet.
  3. Bake for 15 minutes.
  4. Add 5 tbsp of butter in a pan. Once it's melted gradually whisk in the flour until it's thick and somewhat crumbly.
  5. Slowly pour in the beef broth while whisking constantly until it's all added, making sure to scrap any browned bits off the bottom of the skillet. Start with 2 ½ cups and if you want a thinner gravy add in the remaining ½ cup. Cook over medium heat, stirring constantly for 1 to 2 minutes.
  6. Add in the sour cream and whisk to combine. Season with salt, pepper and half of the parsley.
  7. Add the meatballs to the gravy and reduce heat to a simmer. Let simmer for 5 minutes, or until meatballs are heated through. Enjoy!
