Tex-Mex Ground Turkey Skillet

Ingredients
  • 2 tablespoons olive oil
  • 1 pound Simple Truth Extra Lean Ground Turkey
  • ½ yellow onion, diced
  • ½ red bell pepper, diced
  • ½ teaspoon cumin
  • ½ teaspoon oregano
  • ½ cup corn [I used frozen]
  • ½ cup salsa
  • ¼ cup BBQ sauce
  • Brown rice, cheddar cheese, and sliced avocado for serving
Instructions
  1. Heat large nonstick skillet to medium high heat. Add olive oil. When the oil is heated through, add ground turkey, onion, and pepper. Break the turkey into small crumbles.
  2. Once turkey is almost cooked through [about 7-8 minutes], add cumin and oregano.
  3. Cook for another 3-4 minutes, or until vegetables are softened and turkey is fully cooked. Stir in corn, salsa, and BBQ sauce.
  4. Turn heat to low and cook for an additional 5 minutes.
  5. To plate, spoon brown rice into individual serving bowls. Top with turkey mixture, cheddar cheese, and avocado.
