Slow Cooker Peanut Chicken

Serves: 4 servings
- 1 ½ pounds boneless, skinless chicken breast, cut into 1-inch cubes
- 1 medium yellow onion, diced
- 1 cup peanut sauce
- 2 cups brown rice, cooked
- 1 cup shredded cabbage
- 1 small lime, sliced
- ½ cup peanuts
- fresh cilantro for serving
- Add chicken, onion, and peanut sauce to slow cooker insert. Cover and cook on low for 3-4 hours.
- Serve with ½ cup rice and ¼ cup of cabbage per serving. Top with a sprinkle of peanuts and cilantro, and a squeeze of fresh lime juice.
