Place English muffin halves cut side up onto a baking sheet. Spoon some of the pizza sauce on each one. Top with mozzarella cheese and roasted vegetables.
Bake for 10 minutes or until cheese is melted and browned on the edges.
Notes
Vary your veggies and roast 1-2 different vegetables for pizza toppings. Or use leftover veggies from dinner the night before.
