Quick & Easy Homemade Muffins

Serves: 12 muffins
- 2 cups flour [I used all-purpose]
- ½ cup sugar
- 1 tablespoon baking powder
- 2 beaten eggs
- ½ cup oil
- ½ cup 2% milk
- Optional: chocolate chips, cinnamon, vanilla, chopped nuts
- Preheat oven to 400. In a mixing bowl, combine dry ingredients. Add in wet ingredients and stir to combine.
- Scoop mixture into lined or greased muffin tins, filling about ⅔ of the way full with batter.
- Bake for 17-20 minutes, or until the tops of the muffins are golden.
