Slow Cooker Taco Soup

Ingredients
  • 1 pound lean Ground Beef
  • ½ teaspoon cumin
  • ½ teaspoon oregano
  • 2 cups brown rice
  • 2 cups of your favorite salsa
  • 4 cups chicken broth
  • 1 cup frozen corn
  • 1 cup frozen bell pepper mix [or 1 cup fresh green or red bell pepper, roughly chopped]
Instructions
  1. Heat skillet oven medium-high heat. Brown ground beef until cooked through, about 8-10 minutes. Add seasonings and stir to combine.
  2. Meanwhile, cook rice according to package directions [I used microwaveable brown rice].
  3. Add all of the ingredients to slow cooker insert except frozen vegetables. Cover and cook on low for 4-5 hours. 30 minutes before serving, add frozen vegetables. Stir to combine.
  4. Serve with optional ingredients such as sour cream, cheddar cheese, avocado, and tortilla chips.
