Cheesy Chicken Chowder

Ingredients
  • 2 tablespoons olive oil
  • ½ cup celery, diced
  • ½ cup onion, diced
  • ½ cup carrot, diced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 3 cups fingerling potatoes, diced
  • 3 cups frozen corn
  • 1 cup milk
  • 2 cups cheddar cheese, shredded
  • 2 cups chicken, cooked and shredded
  • Black pepper to taste
Instructions
  1. Place a large pot over medium-high heat. Add olive oil, celery, onion, and carrot and sauté for 10 minutes, stirring frequently. Add the flour and blend well.
  2. Next add the potatoes and broth to the pot and bring to a boil. Cover and simmer for 10 minutes. Add corn and stir until combined. Simmer for another 10 minutes.
  3. Stir in milk and cheese. Continue stirring over low heat until cheese has melted and soup has thickened.
  4. Just before serving, add chicken to the pot. Once chicken is heated through, serve immediately.
