Chicken Broccoli Rice Skillet with Cheddar Cheese

Ingredients
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast cut into bite-sized pieces [about 1.5 cups]
  • ½ medium yellow onion, diced
  • 2 cloves of garlic, minced
  • 2 cups broccoli florets, cut into bite sized pieces
  • 2 cups brown rice, cooked
  • 1 cup chicken broth
  • 1 cup of cheddar cheese, shredded
Instructions
  1. In a large skillet or pan, heat olive oil over medium heat. Add chicken and cook for 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add the onion and garlic to the same skillet. Stir frequently and cook until tender, about 5 minutes. Stir in rice and cook until coated, about 1 minute.
  3. Add chicken broth to the skillet. Bring to a boil over high heat. Reduce heat to low and stir in broccoli and chicken. Cook for an additional 5 minutes.
  4. Top with shredded cheddar cheese. Serve once cheese is melted.
